Tomato Florentine Soup

Tomato Florentine Soup

Since Monica did a soup one I will add a couple also. This one is for a Crock pot

3 cups chicken broth
2 (14 1/2 ounce) cans diced tomatoes with basil, oregano & garlic undrained ( I use Hunts)
1 (15 ounce) can tomato sauce
1 (10 ounce) package of frozen chopped spinach
1 cup chopped onion
1 1/2 tsp minced garlic
1/2 tsp salt
1/4 tsp pepper
1 (9 ounce) package refrigerated cheese filled tortellini

Combine first 8 ingredients in 4 quart slow cooker. Cover & cook on LOW 5 1/2 hours; add tortellini and cook on low 30 more minutes. Garnish with Parmesan cheese as desired.

I LOOOOOOVE tomato soup, Cheryl, and I'm always looking for crockpot recipes. I will make this one this week but I think I'll just use shells to cut back on the calories. Hubby can sprinkle his own cheese on top. Thanks for sharing.

I've thought about that myself Jen but it really isn't that many calories for 1 serving.

Well, I was really thinking about the fat in the cheese, rather than calories. But it sounds yummy.

That does sound really good, Cheryl. Tortellini is my favorite pasta and we don't get enough. I'll get some tomorrow.

My crockpot is a honking big one. Do you think I should double this recipe? Otherwise, I fear it will be too shallow in the pot. Is there such a thing? Help. I'm not an experienced crock potter.

Jen with the tortellini it really makes a big pot because that swells up so much. I'm not sure with just using pasta. I have a big crock pot also it it is filled with this recipe.

I am starting my doubled recipe now. Wish me luck. The large pasta shells also swell a bit. Can't wait for dinner time.

I need to try this over the weekend. Tomato-base soups are my faves and DH will love that it has tortellini in it.

I'm planning on making this tomorrow. I always like to have soup if we think the power is going to go off. Well, any excuse really to make soup.

The soup was a hit with hubby. I probably put too many shells in but I knew it wouldn't fill his belly without. I would be happy with just tomato soup with no pasta. I was raised on Campbell's Tomato soup. Every day for lunch. Loved it.

Thanks so much, Cheryl. Of course, we have another couple of meals out of that batch even though I ended up NOT doubling it. Thank goodness. It would have overflowed if I had. Snicker.
