Hi there
I have a terrible bout of the flu and what would be better than some more homemade soup!
Too hot over there for you girls but maybe when winter hits you might like to try it.

Cauliflower & Leek soup.

I'm still in the midst of cooking it, about another 10 mins to go, so will post the recipe later.

Feel better Sharon. I look forward to cooler weather so I can make some soup. I have a veggie soup that I make and both hubby and I love it. As you say too hot over here now.

You need some good rich matzo ball soup - it'll cure anything.

Back and the soup was to die for!!

Slice 2 leeks (the white part) and saute in your soup pot in some butter until soft
Add 2 crushed garlic cloves and saute for a further minute
Remove leaves and stems and core cauliflower and cut into largish chunks
place in saucepan and then add chicken stock until the cauliflower is almost covered
(don't cover it right over with the stock)
Simmer for around 40 mins until cauli is soft
When cooked either place in food processor or use blender stick to mix

All done.
Add salt and pepper to your liking when served :)

That sounds so good (even though I'm in the house with the A/C running and dripping sweat just typing on the computer).
Bring on the cooler weather...

I just happened on this thread - and let me tell you - October 4 and unusually cold - that sounds absolutely delicious!!

I made a pot of Chicken noodle soup yesterday. I don't eat it but Joe loves it. Added lots of veggies to it also - peas, carrots, green beans and corn. I guess more like a chicken vegetable but with noodles instead of potatoes.

I had the best cauliflower at an Arabic restaurant last week. It was steamed with lemon juice and just a bit of garlic. It look like it was roasted now that I think about it. Best I've ever had!
Our admin assistant is bringing potato soup for our lunch today. Doesn't that sound wonderful? She's a marathon runner and her food is fuel - rare for her to bring in a treat like potato soup!
DH won't eat soup - I could live on it. There are so many wonderful recipes out there.

I love soups and stews. DH is jonesing for chili beans and I'm trying to convince him it's too warm yet. Besides, I like his taco soup better. I'm looking forward to the first batch of 16 bean soup (or is it 15 beans?).

it's never too warm for chili (my opinion at least)

I have to agree with you on that Christy. I like mine with macaroni but Joe doesn't.
