Needing to make these today from scratch. Any tips?

Mmmm

One of the restaurants here makes peppermint ones at Christmas. Fills them with peppermint ice cream, tops with whip cream and crushed peppermints. Yummy!

Oh other than that- no tips

Gonna fill these with a variety, though the peppermint ones sound nice!!
Gonna do...
vanilla custard
chocolate custard
whipped cream
chocolate whipped cream perhaps laced with some grog :) :drunk:
ice cream

choux pastry filled with whatever but usually vanilla custard. I am thinking choc or vanilla mousse might be a good filling too

I fill them with chocolate mousse and use hot chocolate sauce over them and then whipped cream. Everyone seems to love them.

I had to google this...we call them cream puffs. I haven't made these in a long time, usually filled with a custard and drizzled with a chocolate sauce....

Italian cannoli cream inside, yum
I googled, too.
We called them cream puffs no
matter what they were topped with

They went down a treat. And being a scrapper I took photos every step of the way. Good thing because MIL and SIL did not believe I made them from scratch.
And best of all, dh loved them!
