My Gazpacho salad recipe

Before I list the ingredients I use, I want to point out that this is a very flexible salad. Use the vegetables you like; if you don't like something don't put it in!

My version...

2 colored (red, yellow or orange) peppers
1 small sweet onion
1 English cucumber
4-6 Roma tomatoes (this will change to heirloom tomatoes as soon as they are available!)
Kalamata olives (however many I want to add in)
Feta cheese (I've used the large crumbles and also chopped up a solid block... the block works better for this)
balsamic vinagrette dressing

Chop the vegetables into bite-size pieces. Toss with olives & feta cheese. Add dressing to taste.... start with a small amount and add more if needed. As the mixture sits it will create its own juices. It's actually better after it sits and marinates for several hours or so.

That's it... quick and simple. My girlfriend skips the feta and olives, uses purple onion in place of sweet onion, and makes it more of a gazpacho soup by adding V8 to it.
