1 cup sugar
1 cup butter
1 tsp vanilla
1 tsp almond extract
1 egg
3 cups all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 cup chopped craisins
1/4 cup chopped walnuts (opptional)
1 package white chocolate chips
Beat the sugar, butter, vanilla, almond extract and egg till well blended. On low speed beat in flour, baking soda and salt. Stir in cranberries and walnuts
Divide dough in half. Shape each half into a roll about 8inches long and 2 inches in diameter. Wrap in plastic wrap and refrigerate 2 hrs.
Heat oven to 375 degrees. Cut rolls into 1/8 inch slices. Place 2 inches apart on ungreased cookie sheet. Bake 6-8 mins. Cool slightly, remove from cookie sheets and cool completely.
Melt white chocolate chips till smooth; dip about a third of each cookie into the chocolate letting excess run off; let set on waxed paper till set.
