A New Way to Make Quick Fudge

One of our managers made a weekend trip down to the Rio Grand Valley in South Texas a couple of weeks ago. She brought back this recipe....and I tried it...Makes great fudge :-)
1 can of prepared frosting
1 regular bag choc chips
1 pack of chopped nuts

mix the frosting and chips together in a microwavable bowl, cook in micro for 2 minutes, stir in nuts and reheat for another 30-40 sec. Cook and check often until the right consitency to pour into prepared pan - let cool and then cut and eat. Imagine the combinations. I made some with choc frosting, milk choc chips and chopped pecans (in Texas, what else would you have). Planning to make some with vanilla frosting and choc chips soon. Imagine what you could do with cherry frosting and choc....

That does sound super easy- and I'm all about that in the kitchen these days.

Although right now, I've eaten so many christmas cookies this week-end, I'm afraid my pants are not going to zip up tomorrow!

Here's one for Peanut Butter Fudge -

dump 1 box powdered sugar in a large bowl
cut a stick of butter (no fake stuff) into 6 pieces and lay them on top of the sugar
sprinkle 1 tsp vanilla over the top
pour 1/4 evaporated milk on top of that
DO NOT STIR!
Microwave for 2 1/2 minutes (on high)

Add 1/2 cup of peanut butter.
Mix until smooth
Pour into a buttered 10 x 7 or 8 x 8 dish and let it cool.

I have one for a chocolate version if anyone wants it.

Oh, that one sounds yummo too!! Pass on the chocolate one please!!

Ok, bought the fudge ingredients today. Plan to make it tomorrow though. 11pm is a little late to start cooking sweets. :lol: I plan to have dd help me OR do it herself and I'll take pics and turn it into a layout!!!
